Turmeric Powder<br />1 tsp. Black Pepper Corns<br />1 tsp. Cloves<br />8 Green Cardamoms<br />2-inch stick of Cinnamon<br />3 Bay Leaves<br />½ cup Fried Onion Slices<br />¼ cup Fried Garlic Slices<br />6 Red Chillies<br />⅛ tsp. Fenugreek Seeds<br />1 tsp. Ginger Powder<br />3 sprigs Curry Leaves<br /><br /><br />Method:-<br />- Roast the coriander seeds, cumin seeds, mustard seeds, black peppercorns, fenugreek seeds, cloves, curry leaves, cinnamon, green cardamoms and bay leaves on a low flame for 10-12 minutes. Transfer to a bowl.<br />- In the same pan roast dried red chillies by adding few drops of oil.<br />- Add fried onions, deep fried garlic, roasted dry red chillies, turmeric powder, asafoetida to the roasted spices and let it cool down to room temperature.<br />- Once cool, grind to a powder in a mixer/grinder.<br />- Transfer to an air tight container.<br /><br />Madras Curry Powder is ready!<br />
